
Ingredients1 cup quick-cooking oats
1 cup Glenisk fat free milk
1 cup Glenisk Natural yogurt
1 large apple cored, peeled and grated
3 eggs, beaten
3/4 cup whole-wheat or brown flour
3/4 cup unbleached plain flour
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/4 cup melted butter or 1/4 cup vegetable oil
Syrup, honey, or jam, for serving
Stir together the oats, milk, yogurt and apple in a large mixing bowl. Let the mixture sit for 15 minutes. Add the eggs and stir to combine. In another bowl, sift together the two flours, baking soda and baking powder. Add the flour mixture to the oat mixture and stir well. Add the melted butter and mix.
Drop large spoonfuls onto a hot, lightly-oiled griddle or frying pan; cook over a medium heat for 2 to 3 minutes, until well-browned on both sides. Serve with syrup, honey or jam.
