Strawberry  Cheesecake

This recipe comes from Monique Schreven, one of Glenisk’s Goat Farmers. Monique makes her own goats cheese from goats milk from the farm, but you can use any soft goats cheese or a regular cream cheese.

Note: Photographer's Apology: So delicious was this cheesecake that photographing it came a poor second to tasting it ... mmm!

 

Ingredients:

  • 200g digestive biscuits
  • 100g Glenisk Organic Irish Butter
  • 250ml Glenisk Organic Fresh Cream
  • 1 packet of strawberry jelly
  • 250g unsalted soft goats cheese or cream cheese, i.e. Philadelphia
  • Sliced strawberries to decorate

Method:

  • Melt butter and add crushed biscuits.
  • Place in a spring form tin and press down evenly
  • Allow to cool
  • Dissolve jelly and allow to cool (but not set)
  • Whip the cream and mix with goats cheese/ cream cheese and the cooled jelly mixture
  • Turn into the tin and chill until set
  • Place sliced strawberries on top, just before serving
