Macreddin Brown Bread

 Ingredients

  • 375 grms Organic wholemeal flour
  • 500 grams Glenisk Organic natural yogurt
  • 75 grams Organic black strap Molasses
  • (If you don't have Molasses, treacle is a good substitute)
  • 9 grams Baking Powder
  • 5 grams Bread Soda
  • 4 grams Fine Sea Salt
  • 1 small Organic egg
  • 25mls Organic Sunflower oil

Preparation

This delicious Organic Brown Bread is a firm favourite with guests of BrookLodge and Ireland's only certified organic restaurant, The Strawberry Tree at Macreddin. Here, head chef Norman Luedke shares the secret to his prized Macreddin Brown Bread recipe.

Firstly, choose high quality organic ingredients - and secondly bake the bread at two different temperatures:

Mix all of the ingredients together to form a light, almost runny dough - similar to the consistency of porridge.

Flour a baking tin, pour in mixture and bake at 230 degrees for 14 minutes. Then drop the temperature to 180 degrees and bake for an hour. If you are baking with a fan assisted oven, drop the temperature to 160 degrees for the second phase of baking.

Let the bread rest for 1 hour in the tin before taking it out.
