Summer Chicken Curry
Ingredients
- 1 cup Glenisk Natural yogurt
- 1/4 cup mayonnaise
- 1 tablespoon curry powder
- 2 whole chicken breasts, halved and poached, then skinned, boned, and cut into 2-cm chunks (or 4 cups leftover cooked chicken)
- 1/3 cup finely-chopped scallions (white and green parts)
- 2 cups seedless green grapes, halved lengthwise
- 3/4 cup slivered almonds, toasted
Preparation
- In a large bowl, combine the yogurt, mayonnaise, and curry powder. Add the chicken, scallions, grapes and almonds. Toss together to coat.
- Serve chilled. A cold creamy curry, delicious with pitta bread triangles.
