Wholegrain Waffles

 Ingredients

  • 2/3 cup whole-wheat or brown flour
  • 2/3 cup brown-rice flour
  • 2/3 cup soy flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons wheat germ
  • 1 cup Glenisk whole or low fat milk
  • 1 cup Glenisk Natural yogurt
  • 3 tablespoons melted butter, cooled
  • 3 eggs, separated

Preparation

  1. Whisk together the three flours, baking soda, baking powder, salt and wheat germ in a large bowl. In a smaller bowl, mix together the milk, yogurt, cooled butter and egg yolks. Add the milk mixture to the dry ingredients and stir until everything is thoroughly blended. In a separate bowl, whip the egg whites until stiff peaks form. Fold the egg whites into the batter, mixing just until blended.
  2. Cook on a hot, oiled waffle pan following the manufacturer's instructions.
